There was a time, believe it or not, when chicken wings were thought of as scraps given to the dog or tossed out with the garbage. Nowadays, they are all the rage as appetizers and party fare. They rank on the top of Super Bowl food polls as one of the hottest bites for game day. Americans will eat 1,083,333 football fields worth of wings on Super Bowl Sunday based on last year’s count. How did they achieve this heightened status from their lowly place in the soup pot? Well, it’s a Cinderella story for certain. Once upon a time, there lived a wing man in Buffalo, New York. The date was October 30, 1964. There were hungry boys needing a midnight snack and no food on hand other than a batch of wings awaiting the stock pot. The wings got fried up, dipped in a buttered spicy chili sauce, and served with celery and blue cheese dressing as a dipping sauce to cut the heat. History was made and many fortunes as well. Not so good for the chicken.
Of course, not all wings are created equal as the many different recipes show… there is now a personality test based on your personal fav. Here’s a shortened version, just relax and answer the questions honestly. Try not to drool on the paper.

If you chose (a) most often you have a wild side. You hit life for all it has to offer. If you chose (b) most often you make the most of opportunities that come your way. You enjoy the quiet moments in life as well as the big ones.
Bacon Chipotle Pepper Wings
4 strips bacon
1 Tablespoon garlic, minced
1/4 cup onion, diced
2 cups Ketchup
1/4 cup cider vinegar
1/4 cup brown sugar
1 Tablespoon black pepper
2 Tablespoons Chipotle pepper, minced
5 pounds chicken wings
Saute bacon, add onion and garlic. Add ketchup, vinegar, brown sugar, pepper and chipotle to the skillet. Simmer for 10-15 minutes. Dip wings in bake in 400 degree oven or grill wings over medium hot grill basting often with sauce.
Caribbean Spiced Chicken Wings
3 Tbs Salt
2 Tbs Brown sugar
2 Tbs Ground ginger
2 Tbs Ground coriander
2 Tbs Black pepper
1 Tbs Onion powder
1 Tbs Garlic powder
1 tsp Allspice
1/2 tsp Cayenne pepper
4 to 5 lbs Chicken wings
In a bowl mix together salt, brown sugar, ginger, coriander, pepper, onion powder, garlic powder, allspice and cayenne pepper. Sprinkle seasoning over both sides of wings and rub in. Marinate for 30 minutes in refrigerator. Over medium high heat cook wings on grill until cooked through and juices run clear, 20 to 25 minutes, turning every 5 to 7 minutes or bake in preheated 400 degree oven until done.
Kickoff Snack Mix
(always good to have for those munchers in your group)
Nutty – peanuts, almonds, sunflower seeds, cashews
Salty – pretzels, crackers, chips
Sweet – Chocolate chips, butterscotch chips, white chocolate chips
Fruit – dried cranberries, raisins, blueberries, banana chips
Crunchy – cereals such as Chex or Cheerios
Have the shakers out to spice it up with cinnamon, nutmeg, or flavored salts.
Baked Mixes for added flavor:
1 1/2 c. honey
1 1/2 c. water
1 c. vegetable oil
1/2 c. molasses
1 1/2 tsp. salt
2 tsp. cinnamon
I tsp. vanilla
Pour over dry ingredients stirring gently until coated. Bake in 300 degree oven for 30 minutes.
1/2 c. butter
1 1/4 tsp. seasoned salt
4 1/2 tsp. Worcestershire sauce
Melt butter, add other ingredients. Stir in dry ingredients until well coated. Bake in 300 degree oven for 30 minutes.
With the right dip, good turns into great.
Chicken Fajita Dip
2 blocks cream cheese softened (16 oz total)
1 pkg taco seasoning
2 cups chopped chicken ( can purchase this in the frozen section of the supermarket)
1 bottle taco sauce
2 cups shredded cheddar cheese ( I use pepper jack)
Jalapenos & Black olives optional
Mix taco seasoning and cream cheese together. Spread in a 9 X 13 baking dish. Top with chicken. Cover chicken with taco sauce. Sprinkle with shredded cheese.
Place in 350° F. oven for about 20 minutes, until cheese is bubbly and mixture is warmed through. You garnish this warm dip with chopped lettuce, tomatoes, jalapenos, olives.
(note: cottage cheese takes on other flavors well so you can change this up easily)
3 cups low-fat cottage cheese
3 tablespoons lemon juice
1 teaspoon dried herb
1/2 teaspoon celery salt
1/4 teaspoon paprika
1/4 teaspoon black pepper
Salt to taste
In a blender or food processor, blend all ingredients, except the salt, until smooth.
Chocolate Peanut Butter Crunch Bites
(There is a chef in NYC whose signature item in his candy store is chocolate covered breakfast cereal)
1 lb Chocolate candy coating
1/2 C Creamy peanut butter
2 C Peanut Butter Crunch cereal or substitute your favorite
1 C English toffee bits
Place candy coating in a microwave safe bowl and heat on high in 1 minute intervals, stirring between each, until melted. Add peanut butter and stir well. Add cereal and toffee bits, stir until well combined. Scoop a tablespoon at a time and place on parchment paper-lined baking sheets. Cool completely before serving.
